Data is always either stored somewhere, we call this "data at rest", or in transit from one storage location to another.

To protect data at rest usually technologies such as redundant disk arrays, firewalls and encryption are utilized to ensure adequate protection.
While in transit data is almost always encrypted to prevent it from being read by intermediary nodes it may flow through.
